I have been having the same problem as well and gave up on trying to create light color themes. I am posting here to see what kind of reply you will get about this.

Microsoft's theme editor allows you to change the font color for most everything EXCEPT the fonts in the drop down list. Its not you, its Microsoft (being stupid as usual) and the software.

Yea...use a different theme editor Seriously, I dont know of any work-around, though maybe someone else does. Unless Microsoft updates their theme editor, your best bet is to use a different one. I dont know of any other freeware ones, only ones that cost some dough.

Alternatively, you can try to get SPB's Extended Theme Generator to work; in my experience, it does not do anything at all, and the Microsoft Theme Generator 2002 remains unchanged. Good luck.ThemeBuilder 2003 - freeware!!
M$ Theme Generator does not allow you to customize the Start Menu text color for Today Themes that it produces. A registry setting on the PPC can be used to control the color for themes lacking this setting.
The key in question is: HKLM\Software\Microsoft\Color\39. If it does not exist, create a new key, type Binary and enter the hexadecimal color equivalent. The format must follow this convention: rr gg bb 00. To get black color you would enter 00 00 00 00.
Another alternative route for fixing this is FunnySnake's TKCreater. It's a small theme editor that runs on your PPC itself. I don't know that I would ever use it for creating themes from scratch, but for font color editing it's a good choice. Best of all, because you are running it on your Axim, you'll be able to tell instantly if a color choice really is good or not.

Ps... pro / or not, it still stays white. The only thing that will work is the Reg tweak and not worth the hassle for a theme.
No, TKCreater works quite well at changing the menu color on a theme. In fact, with nice little freeware apps like TKCreater out there, I don't know why anyone even bothers to mention the Reg tweak anymore.
