i need to have some files sync *ONE WAY* to my axim (from server to axim)

the files are like...
\\server\share\folder\excelfile.xls
\\server\share\folder\excelfile2.xls
etc...

i want them to goto this directory on my axim
\My Documents\Work Documentation

how do i do this? again, i want this one way: i do NOT want any updates from the axim to go back to the server

Check out Microsoft Synctoy. It is free and it works great. You can set it up to sync one-way to the Activesync files folder which will, in turn, sync with your Axim.
Bottom line -- no changes to your original file from the Axim.
