I am trying to learn Japanese and was hoping that there was a language pack for WM5.

No, there isn't. You'll either have to change the ROM, install 3rd party software or do a bit of tinkering:

There's the Bagoj IME for Japanese, as well as the eChinano5 file to allow the Axim to display Japanese, Chinese, and Korean character, IIRC.
