Tell me I didn't just see that...

I have ActiveSync set up to sync with Outlook on my work laptop. I bring the laptop home (where it can no longer access the Outlook mail server) and plug it into the cable so I can transfer some files...

I just looked at my notes (~30 and all synched with Outlook Notes) and THEY'RE ALL GONE!! WTF!! Are you telling me that if ActiveSync can't find the Notes in Outlook because they're on the server, that it will think they are deleted and remove them from the PDA????? What in the blue hell would prompt the software designers to do that???

I had a Psion before this, and I've never had a problem syncing with Outlook - even when not connected to the server...

If this holds true, please tell me there are other (BETTER) syncing programs out there....please?

I do the exact thing you are desribing all the time and it works great.
A couple of things you may want to check:

Do you store your Outlook notes on your local PC(Laptop)?
Did you sync Outlook on your Laptop before disconnecting from your office ??
Check the Activesync options for which directories and timeframes it keeps synced up.

Hope this helps
Good Luck

There's a place in your options to have your device sync with your server OR your server to sync with your device..... You probably had device sync with server checked so when your device looks for outlook and sees nothing it gets rid of those files. You might want to reverse that when you go home. That's my theory anyway.. let me know if that helps you out, I'm curious myself...
