Has anyone sucessfully flashed a X5 to change the language?
if so what method did you use (compact flash etc)

How can you go about changing the language of the applications? Word etc?

I don't know of anybody that has actually done this, but I don't see any reason why it wouldn't work. CF is the best (and I think the only) method to get it to work.

Have you read about the CF image flashing? This is the way you'll have to do it. All you have to do is get a hold of the IMG file for the language you want (and be a legal owner of that language of Pocket PC), have a CF memory card (at least 32MB) and flash to your heart's content. This will change the language of Word and Excel and your other programs as well.

I believe you may be looking for the tricky process explained here:
http://tom61.arcadecontrols.com/axim_bootloader.html

I'm not trying to change the language, but I've recently experienced the "vanishing built-in storage" problem, and hard/soft resets don't bring it back. Dell is shipping me a replacement unit by tomorrow, but my original was bought this January and came with a PXA255. I'm afraid that the one they send me will be an older refurbished model with a PXA250

So, tonight I plan to try the CF boot loader procedure described at the link above. I figure I've got nothing to lose... but a question for y'all:

Let's say my Built-In Storage reappears tonight after I flash the device, and the unit they send me has a PXA250. Do you think I should keep my original unit, or does the Built-In Storage disappearance signal bad ROM and therefore future troubles?

Does this replace the origional language, or just load off the CF - i.e the axim will revert to the origional language on a hard boot/

This flashes the ROM. Even after a hard reset it will be retained.
