I'm running a very similar setup described in the 1st post (I got all the details from solsie's excellent thread, glad to see I picked the right ones).
However It does seem that getting a setup that works is easy. getting a setup that works for more than a couple of weeks seems to be the difficult bit.
Battery life is better than wm2003 at the moment, and performance is (on average) better.
Still after 48 hours it's too early to say

How long did it take you to set this up from a hard reset?

well it was my second attempt
the first one just went mad after thebfirst day.
install tweaks2k and apply wm5 tweaks.. 5 mins...
1soft reset required
fake server 5 mins
install patch from shsmith 5 mins v10 as 11 may have problems and create shortcut in auto start...
install software apps and register 15 mins
clearvue adobe phatpad, phatnotes, notem, opera and tengo
apply vga hack to adobe
Backup using built in util 15 mins
Backup using spb 3 mins

but I wantedvto see if I could get a stable system firs

And of course saying that it's working is the kiss of death.....
Still, if it falls over then i'm not going to try and fix it this time, and back to wm2003se land i will go

good concrete list. This site turns out to be more help than calling DELL!
Also, MS has a newer Activesync than we all got on our WM5 upgrade disk - Version 4.1.4841.0 - seems to work ok.

Well there was nothing conclusive... I installed them and they ran fine for a couple of hours, then I went to lunch and my axim was frozen in the cradle, with the clock frozen for 30 mins, and froze up several times after that.
The last wave of apps , were PB, iLauncher, textmaker and planmaker. All of which were wm5 versions. Disabling PB and iL didn't make any difference. Still froze solid later on... at which point I downloaded the downgrade

Awesome info, but the fact remains, that if you have to go to such lengths to get these things to work properly, then Dell F'd up and needs to get on the ball and release a better product and fix these issues themselves.
