Simplest answer is you really should talk to your company IT guys. You mentioned that you're being prompted for incoming and outgoing servers, so I imagine you are trying to setup a POP3 connection - which may or may not even be allowed on your Exchange Server. If it is, it may be on a default port, or a 'secure' POP3 port depending on how your IT staff have set it up.
Even nicer is to use ActiveSync - but again you should check with your IT guys to see if this feature is setup and allowed and (hopefully) uses SSL and secure connections.
I'm an IT guy - so others may disagree, but I firmly believe that if you want to do your own thing and not consult IT dept., then go for it with your own private gmail / yahoo / whatever account. If you want to connect to a corporate Exchange server, you should have to talk to IT staff and ensure you connect per company standards ...
