If you hold down the power button (assuming you've mapped it to that function) you can fully power off the device. In this state the ram is flushed and nothing happens till you turn it on again. i.e. alarms don't go off etc.
To put it in standby just press the power button and it'll turn off the screen and basically suspend the device. In this state it still uses some bettery power but much less than when full on. Alarms will sound etc.
So power fully off to save bettery or to 'reset' your device, and standby for normal use.

Can someone give me an estimate of how much juice is burned when in standby mode? About how long will a full charge last if I left it in standby mode? Hours, days, weeks? What do most people do?
I leave mine 16+ hours and it stays at 100% battery. This is after I have applied the activesync fake server trick, and also stop all running programs.

Not to beat a dead horse, but....I have set my Axim (WM5) to "Turn off devise if not used for 1 minute". When this happens, I can turn it back on by hitting any button. So...after a minute of non-use, is it simply going into standby? If it was truly "off", only the Power button would turn it back on --right??

Yes. Also, it'd take about a minute to boot in from the truly powered off state.
