Do you mean Regional Settings? I tried that for English UK and still got "color" not "colour".
I would think that would work. I have a Fujitsu-Siemens Pocket Loox N560 with the UK English version of WM5 installed. Upon first use, I set the clock to the Eastern Time Zone, and went into the regional settings and "United States" was already selected for me. "Organization" and "color" were as I come to expect it to be spelled.
Maybe the US English spelling was embedded into the ROM of a UK English device but maybe the UK English is not embedded into a US English device.
How do I get the suggested words resulting from letter recognizer to come up in UK English rather than US English spelling?

On a pre-WM5 device, you will only need to read http://www.aximsite.com/boards/showthread.php?p=829474 and do what I've said there (that is, extract the dictprob.dat and statdict.dat files from a UK ROM image and shadow the old files with them.)
I haven't tested this under WM5 but I'm afraid it won't work (it's not as easy to shadow \Windows files in WM5 than under pre-WM5)

Then, your only choice is flashing the device with the UK ROM.

It won't work - the built-in dictionary is one-country only (as has also been pointed out in my article) - that is, it's not possible to make it return UK English spelling.

This may be true for the X51v rom....while I can't prove otherwise beyond my own experience but I think some other devices may work differently.
