I plan to upgrade my x51v to WM6. I just want to make sure I have a backup plan in case it fails. If I fail on the initial upgrade, do I keep trying to upgrade or is there a procedure to fall back to WM5? Thanks for the help.

I reloaded WM5 from my SD card. I used this tutorial:
Along with the WM5 A12 ROM file from Dell's web site. It worked great. WM6 was just giving me too many problems. Probably because I run so many different programs. I noticed the difference in speed, but it was locking up a lot. Also, I use Windows live for email a lot, and I didn't like the html formatting in WM6.

That has never been my experience with WM6 or WM6.1 ROM flashings. All (8 of them with betas) have been very stable and noticeably faster than any WM5 revision from Dell including the last on A12. None of them locked my unit up unless it was caused by an application I was experimenting with.
I also have never has a WM6 or WM6.1 ROM flashing go wrong. The key is to follow the instructions to the letter, and make sure the ROM your going to flash is for your unit or it will brick you unit. In addition I have saved each ROM set of files just so I can go back if needed.
Since I did it last night, I have some feedback. The jump from the 2003SE bootloader to WM5 is the tricky part. My screen went black (and many others have reported this) and for all intent and purposes it looked like I bricked it. After about 30 mins I tried again to upgrade to WM5 after I upgraded the loader and it worked. That initial part was frustrating and somewhat worrysome, but after that, it was a piece of cake
Edit: I see you are already at WM5 (having a X51v, duh). If that is the case then I do not think you will have any problem at all.

I also wanted to see if I could do it, and just how hard it was - it wasn't hard - at ALL.
I sat down last night with my Ax, a power cord and the SD card containing two ROMs - Lenny's WM6.1 A06 and Dell's factory A12.
- I inserted the SD card and began the bootloader process, the screen came right up, I made my selection and it began - the whole thing took maybe 10 minutes.
- Once it finished it told me to hard reset, then boom! - new WM6.1 - and the fastest boot I ever saw!
- anyway, after some "play time" I went back to my old setup - I inserted the SD card again, selected and reloaded A12 - same thing, 10 minutes tops
- one more hard reset and I was back at a factory fresh A12
- from there I just restored from an Spb backup on the CF card (made beforehand) and I was back to exactly where I started, EXACTLY. All my PIM data, weather data, app settings, everything was perfect - Not one single error.
I was impressed...
All told, not counting the time spent playing with WM6.1, I'd say total round trip time from A12 to WM6 and back to a perfectly restored A12 was only about 1/2 hour.

I'd leave it alone if it's working.
I used to always download the latest version whenever they came out, but not anymore with AS. 4.2 was quirky, but I lived with it - then 4.5 came out. Thinking it would cure my problems I grabbed it - BIG mistake.
Seems each new AS release from MS has gotten worse and worse - hangups, corrupt & missing PIM data, partnerships disappearing, etc...
screw it - I went all the way back to v4.1 and have no intention of moving back up.

Could you please help me understand what you mean by "least bundled extras"?
Some ROMs come with apps already preloaded, things like FTP tools, media player apps, VGA utils, etc. - here's an example: [X51V] ROM WM6.1 EN classic, private edition - xda-developers
Lenny's ROMs seem to include the least amount of bundled extras.
These "extras" are apparently embedded to save you the trouble of reloading them after a hard reset - and probably also because the author loaded the ROM with their personal "ideal" feature set. Alternately, sometimes these ROMS can have default MS features disabled or removed as well. The only problem is, not everyone shares the same opinion of "ideal", so there's always some compromise.
Personally, I'd prefer a clean (no frills) version that would allow me to add only what -I- wanted. Once apps are bundled, you can't (afaik) uninstall them. Also, I've wondered about this bundling; what happens if a newer version of that app comes out, can I upgrade or am I stuck with the installed version? And what if later on, that installed version conflicts with something else I want to add? Or what if you simply don't want that app?
