How do I get My Documents to show up in File Explorer?
Any help would be appreciate.

My Documents on your Axim should be "right there" under the root folder. If it is not there, try Menu-->Show all files. If that does not help, you don't have one. (I don't think you need it, try creating one?)

Please do NOT double post. I'm not sure which one is actually your problem.
